The nobility of the black truffle
Black diamond of French gastronomy, the black truffle will know how to seduce your loved one.

The incomparable flavor of the truffle
The black truffle, or black truffle of Périgord, seduces the taste buds of gourmets with its powerful and refined aromas. It gives off musky, woody and slightly earthy notes which evolve in the mouth, offering a unique tasting experience. Its intense taste is at once subtle and lingering, which makes it an ingredient prized by the greatest chefs to sublimate many dishes.
An original touch in cooking
Luxury product, the truffle of Périgord lends itself to simple preparations which highlight its aromas without masking them. It can be grated raw on an omelet, pasta or a risotto, or infused in fresh cream to create a delicate sauce.

An agricultural know-how
The cultivation of the black truffle requires specific conditions to thrive. It develops mainly in calcareous soils, well drained and poor in organic matter, which favor the symbiosis between the roots of the host tree and the fungus. A temperate climate with good sunlight, like that of Touraine, is ideal to harvest the truffles of Périgord, from December to end of February.
To know how to recognize a good truffle
A good black truffle distinguishes itself first by its gourmet scent, mix of earthy, musky and woody notes. On the outside, it presents a rough skin, black to dark brown, often marbled with white veins inside. The texture must be firm and slightly elastic, sign of freshness. When cut, a good truffle releases immediately its powerful aroma.

The answers to your questions
This investment can bring you money in the medium or long term. We guarantee you the totality of the truffles harvested over 15 years. In France, the price of the black truffle is about 1000 euros per kilo. You can hope to obtain as much or more over 15 years, while participating in a beautiful human and gastronomic adventure.
Truffle farming is based on the symbiosis between a host tree, generally an oak, and the truffle fungus. The trees are planted in a calcareous and well-drained soil. They are inoculated with truffle spores, which contributes to the development of the mycelium and the mycorrhizae on the roots of the truffle plants. The soil management, irrigation, pruning of the trees and sometimes the addition of amendments are essential to optimize the production conditions. The harvest is done with trained truffle dogs to detect the mature truffles underground.
The black truffle of Périgord, or tuber melanosporum, is prized for its powerful and complex aroma, which mixes earthy and woody notes. It grows mainly in the calcareous soils of the southwest and southeast of France, in Spain and in Italy, under trees like the oak. With climate warming, Touraine will no doubt be in a few years one of the most promising regions in truffle production. The black truffle develops slowly and is harvested in winter, between December and the end of February. Its rarity and the difficulty of cultivation make it a very sought-after luxury product in gastronomy.
