Our truffle production is committed to a social and environmental approach.

  • Employment: the truffle orchard is located in a rural area and will generate employment of local labor.
  • Soil preservation: a grassy strip is left between each row in order to recreate the natural environment.
  • Carbon sink: the oaks and the vegetated areas will capture, at maturity, more than 150 tons of CO2 per year.

Our ambition: to make you discover the truffle, a noble product with unmatched flavors.

Burgundy truffle, white truffle of Alba… There are many varieties. We have chosen the melanosporum, also called Périgord truffle or black truffle. If the production of this luxury mushroom is suited to the climate of Touraine, it stands out especially by its strong and gourmet taste, appreciated by the greatest chefs.

Our 4,820 oaks are installed on a 10-hectare plot, surrounded by forests and ponds. From the Château de Chenonceau to Clos Lucé, from François Rabelais to George Sand, they are spread across twenty alleys bearing the names of places and personalities who have marked the history of Touraine.

Committed truffle producers, we use the mycorrhization process. It consists in having the oak roots coexist with preselected mushroom strains. Each year, the harvest (or digging) takes place from mid-November to the end of February, with the help of our truffle dogs. It is during this period that the truffles reach full maturity and develop their characteristic aroma. They are then washed, brushed, and trimmed in accordance with current standards before being sent to you within seven days.

Renowned for its rich and intense aromas, the black truffle offers musky and earthy notes that elevate many gourmet dishes. It pairs wonderfully with a fatty base, like foie gras or fresh cream, and can turn a simple omelet or risotto into a refined tasting. To fully appreciate its flavor, it is recommended to accompany it with a pinch of fleur de sel, which enhances its complex and deep aromas. It is a true culinary jewel, prized for its ability to enrich and perfume even the simplest preparations.

The first harvests of black truffle from Périgord should take place in three or four years, after the appearance of a brûlé or fairy ring.
